Ingredients

1 quart

whole milk, pasteurized

2 tbsp

previously homemade yogurt or plain unflavoured yogurt with active live cultures

2 tbsp

whole milk
fresh blackberries, to garnish

Directions

  1. Bring milk to just under the boiling point. Pour hot milk into a glass container and let cool to lukewarm (between 100 and 105ºF). A skin will form on the top of the yogurt.
  2. Combine the two tablespoons of previously made yogurt with two tablespoons of milk. Pour this mixture down the side of the glass container, making every effort not to disturb the skin that has formed on the top of the yogurt.
  3. Cover with a clean kitchen cloth, place container in a warm, draft-free place for 8 to 12 hours or overnight until it thickens. Yogurt must not be disturbed. After 8 to 12 hours, drain off any liquid and store in the refrigerator.
  4. For a thicker yogurt, remove the skin on the top of the yogurt and pour the yogurt into a cheesecloth bag. Hang the bag over the bowl and let liquid drain for 2 hours, or until the desired thickness is obtained. Refrigerate for 4 hours before serving.
  5. Serve garnished with fresh blackberries.

Store in the refrigerator and use within 4 to 5 days. Don’t forget to save two tablespoons for the next batch!
