Ingredients

2 cups

vegetable broth

2 cups

water

2 cups

quinoa

1 cup

fresh green beans, rinsed and trimmed

2

cloves garlic, peeled and crushed

1

red onion, peeled and chopped

1

red bell pepper, rinsed; trimmed and diced

1 can

red kidney beans, drained and rinsed (15 ounce) salt, to taste
freshly ground black pepper, to taste
juice from 1 fresh lime

1 handful

fresh cilantro, rinsed and finely chopped

Directions

  1. In a large saucepan, bring vegetable broth and water to a boil. Add the quinoa, cover, reduce heat and simmer for 15 minutes.
  2. In a separate saucepan, blanch the green beans in boiling water for 3 minutes. Drain and cool, then cut into 2-inch lengths.
  3. Once the grains have cooked for 15 minutes, add the green beans, garlic, chopped onion, peppers, and kidney beans. Season to taste with salt and pepper. Squeeze in the lime juice and simmer for an additional 5 to 10 minutes. Remove from heat and allow to cool.
  4. Garnish with fresh chopped cilantro. Serve warm or chilled.
